Giff took on the Lutefisk Dinner 3 years ago. Elim had held a lutefisk dinner every year for many years, but the people preparing the food just got too old to tackle this big task, and, sadly, it went by the wayside. This is where Giff comes in ... not being raised Lutheran, being of English heritage, growing up in Gary, IN, he had no clue about lutefisk! He joined the church when we got married, and began to hear many lutefisk sagas, usually a lamented tale from and older member of the congregation. So he decided to champion the famed, but nearly forgotten fish! He made a choice early on that he was going to go for quality, not quantity, so Elim limits our dinner to about 200 people. His meal consists of Lutefisk, Swedish meatballs, homemade potato sausage (which was a huge hit), boiled potatoes, rutabagas, carrots, coleslaw, pickled beets, pickled herring, rye and cardamom bread, lefse, and rice pudding with a little half and half. (And, of course, cof!fee!!!) Giff takes on many dinners for the church, including our weekly Wednesday meal, the mother daughter luncheon (from which he's been unofficially adopted as a LCW member ... that would be a lutheran church basement lady), meals for the bazaar and rummage sale, additional fundraisers, and the lutefisk dinner. I think it's wonderful that he chooses to use his gift of cooking to help Elim. AND to take on a meal of such importance to our culture, well, that's just brave. I think the best thing we ever heard was after the first year, someone whispered in our secretary's ear, "This was WAY better than First's!" (Refering to the famous First Lutheran Lutefisk Dinner) That was an amazing compliment, because First is a well oiled lutefisk machine!!! Please consider Giff for the Chef of the year, because he makes me very proud by his service to our community. Thanks for your time! -- Deb Trethewey
